Ingredients
  1. 1 refrigerated pie crust, softened
  2. 4 eggs
  3. 1 C half and half or milk
  4. 1 C chicken, diced or can used canned chicken breast in water
  5. 1½ C broken tortilla chips
  6. 2 C Monterrey Jack cheese,grated
  7. 1 C Cheddar cheese, grated
  8. 1 C chunky salsa
  9. 1 4.5 oz. can of chopped green chilies
  10. ½ tsp salt
  11. pepper to taste
Instructions
  1. Preheat oven to 350.
  2. In a bowl mix whisk together the eggs until well blended.
  3. Add in half and half.
  4. Stir in chicken, chips, cheeses, salsa, green chilies and salt.
  5. Pour into pie crust.
  6. Sprinkle with pepper.
  7. Bake 55-65 minutes or until crust is gold brown and knife inserted into the center comes out clean.
  8. Let stand 10 minutes before serving.
  9. Serve with sour cream and additional salsa if desired.
